摘要 <P>PROBLEM TO BE SOLVED: To provide sprouted brown rice containing Citrus sudachi polyphenol. <P>SOLUTION: A reaction solution obtained by treating dried powders of the squeezed juice residue of Citrus sudachi or the like with a food-processing enzyme is used and brown rice is immersed therein to obtain sprouted brown rice. In this way, sprouted brown rice containing Citrus sudachi polyphenol can be manufactured easily at low cost.
