摘要 The present invention relates to a rabbit brine curing method and a manufacturing method of fried food by using the same. The present invention uses rabbit, a high-protein, low-fat food material with abundant protein and mineral and less fat and less cholesterol, as main material. By using soybean paste, Eucommia ulmoides, milk vetch root, Korean angelica root, and Hovenia dulcis fruit, the rabbit is processed by brine curing, and then fried foods, such as seasoning, garlic, fried dish, and croquette, are cooked by using the processed rabbit, and as a result, the rabbit′s own smell of grass and sour taste are removed, and the meat becomes tender. Also, as effectiveness of each ingredient makes synergy effect, the present invention may be widely used as an outstanding well-being, healthy food for anti-aging, losing weight, preventing lifestyle diseases, fatigue recovery, constipation, diabetes, anemia, and hypertension, and may provide a simple and easy cooking method for eating a rabbit, a food material having antibody preventing neurodegeneration.
