PROBLEM TO BE SOLVED: To provide a freezing method and a freezer preventing deformation and cracks of an object to be cooled when freezing various objects to be cooled, such as biological tissues, various materials and processed products, and perishable food, preventing as much as possible breakage of tissues and cells originally included in an object to be cooled, and capable of freezing without lowering productivity and energy efficiency than before.SOLUTION: In cooling and freezing treatment of an object to be cooled, the object to be cooled is supplied to cooling and freezing treatment by dividing a cooling step into a plurality of steps, and setting a cooling temperature (first cold air temperature) used in an initial stage cooling step in each of the cooling steps is set higher than a cooling temperature (second cold air temperature) used at least in the cooling step thereafter. |
