摘要 FIELD: food industry.SUBSTANCE: liquid alcohol composition contains alcohol in an amount of 30 -50 vol % and particles suspended therein with the help of a low acylated gellan gum; it also contains a sequestrant (represented by sodium citrate in an amount equal to or in excess of the 1.5-fold quantity of gellan gum) and a gel forming agent (represented by calcium lactate in an amount lower than that that of gellan gum. The amount of gellan gum is 0.15 - 0.4 g·l. The suspended particles are represented by fruit pulp, fruit pieces, coconut pieces, gold flakes or a food pigment. The composition is produced by way of preparation of a pre-gel solution for gellan gum hydration, preferably - so that to ensure at least 40 vol % final water content in the ready composition, together with the sequestrant and the gel-forming agent; then the pre-gel solution is mixed with an additional alcohol composition with particles added.EFFECT: invention ensures enhanced stability of suspension of particles in the alcohol composition.15 cl, 6 dwg, 2 tbl, 3 ex
