<P>PROBLEM TO BE SOLVED: To provide a method of freeze-concentration easily suppressing the reduction of quality, and a concentrated liquid suppressed with the reduction of its quality. <P>SOLUTION: As this method for freeze-concentrating an aqueous solution such as fruit juice, coffee, tea, milk, broth, etc., a first method of performing the freeze-concentration treatment in a hermetically closed container under a deoxygenated atmosphere, and a second method for performing the freeze-concentration treatment after performing a treatment for reducing the amount of dissolved oxygen in the aqueous solution are cited. Since in both of the first and second methods, the freeze-concentration treatment is performed in a state in the absence of oxygen or in the presence of only an extremely small amount of oxygen, the oxidation reaction of a flavor/aromatic components induced in the freeze-concentrating treatment is suppressed and therefore, the reduction of the quality of the concentrated liquid after the concentration is effectively suppressed. <P>COPYRIGHT: (C)2006,JPO&NCIPI |
