A crispy food chip comprises a major portion of coarsely crushed nuts, having a maximum particle size of ##and a minor portion of an edible binder, the chip having a moisture content of less than 6 per cent. The preferred nuts are peanuts, which may be roasted. Binders include wheat flour, rice, potato, durum semolina, corn starch, potato starch, and vegetable gum. In a preferred embodiment, a slurry consisting of a major portion of crushed nuts having a maximum particle size of 3/16#, with not more than 20 per cent of fines being particles which will pass a 60 mesh ASTM sieve, and a minor portion of an edible binder, is formed into a thin sheet, dried to a moisture content of 15-25 per cent, the sheet is formed into chips, and the chips are dried to a moisture content of less than 6 per cent. |
