Producing an enzyme comprises providing a minimal medium comprising deionized water, mineral salts and an organic carbon source in a vessel, inoculating the medium with a fungus, incubating the medium at pH 1-4 until the fungus is visible, and recovering the enzyme, provided that the medium and vessel are not sterilized. An independent claim is also included for an enzyme produced as above.
