<p>The invention relates to producing culture media for cultivating bifidus and lactic bacteria and can be used in the microbiological and food industry. Said culture medium makes it possible to cultivate bifidus and lactobacilli for long term storage and at higher titres of bacteria biomass during storage. The milk culture medium for producing probiotic bacteria biomass comprises a base in the form of a skin milk normalised in terms of solid residue, cysteine hydrochloride (L-cystine) or antiscorbutin, milk protein hydrolysate, growth factors from yeast cells, sodium chloride, manganic sulphate MnSO4·4H2O and magnesium sulphate MgSO4·7H2O. Enzymic hydrolysate of milk whey proteins is used as the milk protein hydrolysate and a purified yeast extract is used as the growth factors from yeast cells at the following ratio of milk culture medium components, in mass%: 5.0-7.0 enzymic hydrolysate of milk whey proteins, 0.001-0.002 cysteine hydrochloride (L-cystine) or antiscorbutin, 0.03-0.5 sodium chloride, 0.001-0.005 manganic sulphate MnSO4·4H2O, 0.01-0.02 magnesium sulphate MgSO4·7H2O, 1.5-2.0 purified yeast extract, the rest up to 100% being skim milk (base) normalised in terms of solid residue.</p> |
