<P>PROBLEM TO BE SOLVED: To provide a method for accurately evaluating activity of individual yeast at an early stage of proliferation, a method for obtaining yeast having high activity at an early stage of proliferation by using the evaluation method and a method for producing fermented alcohol beverage by using the active yeast. <P>SOLUTION: The activity of the yeast can accurately be evaluated by using the change of DNA and/or RNA content in a yeast cell at an early stage of proliferation as an index. The index of the change of the DNA and/or RNA content includes increase of DNA and/or RNA content at G1 stage of cell cycle in the yeast, a time required until increase peak of DNA and/or RNA content in the yeast cell appears, the change of ratio of the DNA content to the RNA content in the yeast cell or a time required until a ratio (DNA/RNA) of the DNA content to the RNA content in the yeast cell attains nearly a definite value. The activity of individual yeast at the early stage of proliferation can accurately be evaluated by using the difference of the change of the DNA and/or RNA content as an index. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
