PROBLEM TO BE SOLVED: To provide an image fixing method, an image forming method, and an image forming apparatus capable of reducing an application amount of oil even when various recording media are used and capable of achieving both the low-temperature fixability and hot offset resistance. SOLUTION: In the image fixing method, paper P is held between a heating roller 700 capable of abutting against an unfixed image formed on the paper P and a pressure roller 701 capable of brought into press-contact with the heating roller 700 to fix the unfixed image; the pressure of holding the paper P is controlled in accordance with the type of the paper P; the unfixed image is formed by using toner; and the toner includes an amorphous polyester resin containing inorganic tin (II) compound, wherein tanδat a measurement temperature of 130°C and a frequency of 1 Hz or more and≤10 Hz is≥1.1 and≤2.0, and wherein the ratio of tanδat the measurement temperature of 130°C and at the frequency of 1 Hz to tanδat the measurement temperature of 130°C and at the frequency of 10 Hz is≥1.0 and≤1.8.
