FIELD: food industry. ^ SUBSTANCE: invention refers to process of manufacture of coffee substitutes. The method consists in extracting of green tea with liquid nitrogen and in separating of corresponding miscella, in preparing topinambur, in cutting and drying it in field of SHF at specified parametres of the process, and in roasting; in roasting barley grain, in mixing topinambur and barley grain at weight ratio 7:3, in soaking with separated miscella and simultaneously in building up pressure, in dropping pressure to atmospheric, simultaneous freezing of mixture and in cryo-crumbling it in medium of precipitated nitrogen. ^ EFFECT: facilitating production of aromatised coffee drink by non-waste process. |
