<P>PROBLEM TO BE SOLVED: To obtain a starch quality-improving agent compatible with the kind of starch-containing food products, namely enhancing starch-thickening effect or thickness-imparting effect and suppressing and/or promoting starch aging. <P>SOLUTION: The starch quality-improving agent comprises guar gum with a molecular weight of ≥10.0×10<SP>5</SP>g/mol. By using this agent, the viscosity of starch paste rises synergistically, suppressing the short-period aging of the starch. Alternatively, the starch quality-improving agent comprises guar gum with a molecular weight of 30.0×10<SP>5</SP>g/mol. By using this agent, the long-period aging of starch is suppressed. Further alternatively, the starch quality-improving agent comprises guar gum with a molecular weight of 2.0×10<SP>3</SP>to 5.0×10<SP>5</SP>g/mol.
