摘要 PURPOSE: A manufacturing method of green tea is provided to improve preference of people by increasing the catechin content in the green tea while reducing the caffeine content, and to improve softness of the green tea. CONSTITUTION: Green tea is manufactured by a steaming, a roasting, a rolling, a middle drying and roasting, a final drying and roasting and a drying processes. The rolling process is performed for 3 minutes. The green tea is steamed with vapor for about 60 seconds. The steamed green tea is rolled for 45 minutes. The middle drying and roasting is performed for 40 minutes in 34°C. The green tea leaves are dried with hot wind for 30 minutes in 80°C.
