A method of producing a fish (e.g. plaice) product comprises applying a layer of filling consisting of comminuted fish flesh (i.e. ground or chopped pieces or strips) to the bone side of a fish fillet, placing over the filling a second fillet having substantially identical contours to the first fish fillet to form a unit resembling a whole fish, the bone side of the second fish fillet being in contact with the filling, and deep-freezing the unit. The filling may comprise salt, pepper, herbs, spices, monosodium glutamate and protein hydrolysates. The filling may be extruded as an aqueous paste on to the first fish fillet. The freezing may be performed by a blast or plate freezer. |
