摘要 FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for preparation of recipe ingredients, extraction of allspice by liquid nitrogen with corresponding miscella separation. In addition, the method involves cutting girasol-sunflower, drying it in microwave field at preset process parametres and roasting, cutting rosehips, drying them in microwave field at preset process parametres and drying them up by convective method. Besides the method involves roasting barley grains, acorns, nut kernels, kernels of fruit bones and soya, mixing of girasol-sunflower, rosehips, barley grains, acorns, nut kernels, kernels of fruit bones and soya. Then the obtained mixture is impregnated by separated miscella with simultaneous pressure boost and pressure releases until the pressure equals the atmospheric pressure simultaneously freezing the mixture and cryomilling it in the medium of evolved nitrogen. ^ EFFECT: method allows to produce new flavoured coffee drink according to nonwaste technology.
