FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. The recipe components are prepared according to traditional technology. Black tea is extracted by liquid nitrogen with miscella separation. Prepared yacon is cut and dried in microwave field at preset process parametres. Yacon and oat grains are roasted according to a traditional technology. Yacon and oat grains are mixed in mass ratio 7:3. Obtained mixture is impregnated by separated miscella with simultaneous pressure boost. The pressure is released until it equals the atmospheric pressure along with mixture freezing. Obtained mixture is cryomilled in medium of evolved nitrogen which finally yields the target finished product. ^ EFFECT: method allows to improve organoleptic properties of the beverage and to produce flavoured coffee beverage according to nonwaste technology. |
