摘要 PURPOSE: A method for amplifying sulforaphane content of broccolis through an extra-high voltage process is provided to produce functional foods containing sulforaphane as an active component. CONSTITUTION: A method for amplifying sulforaphane content of broccolis comprises an extra-high voltage process. The extra-high voltage process is performed at 200 ~ 600 Mpa. The extra-high voltage process is performed for 5 ~ 30 minutes. The sulforaphane is formed by the enzymatic reaction of glucosinolate included in the broccoli. The enzyme is myrosinase.
