An instant tea contains not more than 22.5 wt. per cent. ascorbic acid, which term includes isoascorbic and dehydroascorbic acids and salts thereof, in which last case an acid such as citric, tartaric, or malic acid, must also be present, their presence being otherwise optional. Acidic inorganic salts, such as potassium hydrogen sulphate or dihydrogen phosphate, may also be present. The ascorbic acid may be added at any stage in the production of the instant tea, but preferably is added to the solution obtained by extracting the tea leaves with water. |
