摘要 <P>PROBLEM TO BE SOLVED: To provide a method for producing only by salt and water, boiled octopus or steamed octopus which is almost free from skin peeling-off. <P>SOLUTION: This method for producing the cooked octopus includes a process of rubbing with salt by putting salt hot water at 20&deg;C-30&deg;C and octopus into a barrel having no corner in the inside followed by rotating, and a previously boiling process of exposing the octopus subjected to the process of rubbing with salt to 75&deg;C-85&deg;C hot water without washing in water.
