摘要 <P>PROBLEM TO BE SOLVED: To provide an oil-and-fat composition for frozen dessert giving sharp melting feeling in the mouth within a refrigerating or freezing temperature range. <P>SOLUTION: The oil-and-fat composition for frozen dessert contains 8-60 mass% 8C saturated fatty acid and 15-80 mass% 12C saturated fatty acid as the constitution fatty acids of a triglyceride, wherein the sum of the 8C saturated fatty acid and the 12C saturated fatty acid is &ge;28 mass% and the content of triglyceride having a total carbon number of the constitution fatty acids of 28-32 is &ge;15 mass%. <P>COPYRIGHT: (C)2009,JPO&INPIT
