PROBLEM TO BE SOLVED: To provide a heat source system and method of operating the same efficiently controlling the temperature of cooling water, and capable of achieving energy saving of the whole system. SOLUTION: When operating the heat source system 1 provided with a compressor 5 compressing a coolant, a heat source unit 2 equipped with a condenser condensing the coolant compressed by the compressor 5 and removing condensation heat generated when condensing the coolant by the cooling water, and cooling tower 3 equipped with a fan 9 for promoting heat exchange between the cooling water and outside air. A temperature T<SB>IN</SB>of the cooling water in an inlet of the cooling tower 3, and a temperature T<SB>OUT</SB>of the cooling water in an outlet of the cooling tower 3 are measured by water temperature measuring devices 10, 11, and operation of the fan 9 is controlled on the basis of a water temperature differenceΔT(=T<SB>IN</SB>-T<SB>OUT</SB>).
