Homogenous mixture comprises dehydrated potato particles (I) and >=0.5% wt of at least one dehydrated food product has edible fat (II) uniformly absorbed on the surface of (I) such that (II) is 3-40% by wt. total. Compsn. remains completely homogenous on storage and when reconstituted gives a product of improved texture because (II) prevents release of starch from the potato cells. |
