PURPOSE: Flying fish egg analogs containing B-Carotene and a manufacturing method thereof are provided to manufacture the flying fish egg analogs with the cross linkage formation principle using sodium alginate liquid and calcium chloride. CONSTITUTION: A manufacturing method of flying fish egg analogs containing B-Carotene includes the following steps: manufacturing the liquid with sodium alginate having the concentration of 1.5~3.0% (w/v); coloring and glossing the liquid with 0.01~0.03 % of the B-Caroene; manufacturing the liquid with the calcium chloride having the concentration of 1~3% (w/v); agitating a reaction bath in which stabilization liquid of the calcium chloride is stored with the agitating speed of 300 rpm; stabilizing the flying fish egg analogs by reacting the calcium chloride stabilization liquid for 20 ~ 30 minutes; separating the flying fish egg analogs from the liquid; coating the flying fish egg analogs with a polysaccharide solution of 90~100°C; and washing the flying fish egg analogs with water. |
