PURPOSE: A method for manufacturing Makkoli is provided to ensure rich nutrient and to enhance or maintain health. CONSTITUTION: A method for manufacturing Makkoli comprises: a step of seeding 10-40g of seed mal and 10kg of jiebab(cooked rice for brewing) to prepare bred yeast rice; a step of 3-15kg of bred yeast rice and 15-60g of yeast in 12L of water, stirring every 4-24 hours, and maturing for 2-6 days to prepare a crude liquor; a step of mixing 12-25L of crude liquor and 40-150kg of bred yeast rice and dipping at 23-27°C for 36-60 hours; a step of mixing 200-600L of water, 60-400kg of roasted grain powder, and 1.5-6kg of nuruk, stirring every 6-36 hours, and dipping at 28-34°C for 24-72 hours to prepare ferment; and a step of filtering the crude Makkoil. |
