<P>PROBLEM TO BE SOLVED: To provide instant chinese noodle for microwave oven cooking which is to be cooked with a microwave oven after addition of water, requires no drainage of hot water when eaten, and has excellent texture and taste like those when raw noodle is cooked: and to provide a method for producing the instant Chinese noodle for microwave oven cooking. <P>SOLUTION: The method for producing instant Chinese noodle for microwave oven cooking includes: using raw material cereal flour containing 50-100 mass% of weak flour and 0-50 mass% of durum wheat flour as the raw material cereal flour; adding brine water to make noodle in the common procedure; applying an aqueous liquid to the surface of the thus obtained raw noodle ribbons followed by steaming the noodle ribbons to pregelatinize them; thereafter frying the pregelatinized noodle ribbons in oil; and putting the fried noodle ribbons into a package to be packed. <P>COPYRIGHT: (C)2011,JPO&INPIT |
