摘要 FIELD: food industry. ^ SUBSTANCE: pre-processed apples are packed in jars; the jars are filled with water heated to 80-85C and thus maintained during 2-3 minutes. Then the jars are refilled with water heated to 95-97C and thus maintained during 2-3 minutes. After that the jars are drained, refilled with sugar syrup heated to 95-97C, closured and autoclaved under an innovative formula. ^ EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity.
