PURPOSE: A Lactobacillus casei CJNU 0588 having bipidobacterium proliferating ability, isolated from cheese is provided to improve selective proliferating effect and to produce functional food with high bipidobacterium content. CONSTITUTION: A Lactobacillus casei CJNU 0588(deposit number KCTC 11474BP) is isolated from cheese and has an ability of proliferating bipidobactrium. A fermentation spawn is isolated from cheese and contains Lactobacillus casei CJNU 0588(deposit number CKTC 11474BP), culture medium, concentration liquid, or dried material thereof as an active ingredient. A fermentation food is produced using fermentation spawn. The spawn culture is performed in whey medium. |
