<P>PROBLEM TO BE SOLVED: To provide carbohydrate rice which has been said to be effective for physiological effects, adjusted in sucrose and dietary fiber contents while maintaining its yield in being pounded for its polishing, suppressed in sweetness and in-mouth roughness, and improved in deliciousness. <P>SOLUTION: The carbohydrate rice, which has been pounded for its polishing and treated with a cellulase, contains (A) 1-2.2 mass% of dietary fibers and (B) 2.2-4.3 mass% of sucrose and has a mass ratio (A)/(B) of 0.4-0.7. <P>COPYRIGHT: (C)2011,JPO&INPIT |
