PROBLEM TO BE SOLVED: To make the finishing of noodles mechanically simple, by imparting noodles with curling by a machine. SOLUTION: The curling device 3 of a noodle-making machine has a spur gear type engaged roll 60 which is a pair of cylindrical rotators comprising a driving roll 60A having a plurality of driving teeth 61 and a driven roll 60B having the same number of driven teeth 62 as the driving teeth 61, a motor 60C for rotating the driving roll 60A, and a controller 2 for controlling the motor 60C. The engaged roll 60 bends noodle lines with a space g corresponding to the thickness of the noodles between the driving teeth 61 and the driving teeth 62. The driving roll 60A and the driven roll 60B have irregularity on the tooth surface shapes s and tooth groove depths h of the driving teeth 61. The controller 2 controls the rotation speed of the motor 60C so that a peripheral velocity vδat a noodle line-introducing site X between the driving tooth 61 and the driven tooth 62 in response to the delivery speed of the noodle lines cut out from the cutting blade roll 40A of the noodle line-cutting device 40 is always constant.
