Use of water naturally rich in at least one mineral, from a plant, animal or microorganism raw material, to obtain an aqueous extract rich in at least one mineral, is claimed. Independent claims are included for: (1) preparing the aqueous extract from a vegetable, animal or microorganism raw material comprising extraction carried out in the presence of at least one water naturally rich in at least one mineral; and (2) the aqueous extract from plant, animal or microorganism raw material obtained by the above process, comprising per gram of dry extract at least 120 mg of calcium, 56.25 mg of magnesium, at least 0.30 mg of manganese, at least 300 mg of potassium, at least 105 mg of phosphorus, at least 0.15 mg of copper, at least 1.5 mg of zinc, at least 0.15 mg of boron, at least 0.75 mg of silica, at least 0.53 mg of fluorine, at least 2.1 mg of iron, at least 6 mu g of chromium, at least 7.5 mu g of molybdenum, at least 22.5 mu g of iodine, at least 8.25 mu g of selenium and/or at least 120 mg of chloride.
