Average values of the amplitude-frequency characteristics of the difference signal and the spectrum of the difference signal, the maximum and the minimum value of the amplitude-frequency characteristics of the filtered and differentiated difference signals are calculated and the water holding capacity is calculated based on the obtained results using the corresponding formula. The device for estimating water holding capacity has a primary transducer having a device for holding the sample, two power electrodes and two measuring electrodes connected to a matching amplifier.
