<P>PROBLEM TO BE SOLVED: To provide an yeast extract and a dietary supplement, favorably usable for ingesting/supplying nucleic acid such as pyrimidine in particular because the yeast extract has little purine nucleotide in spite of high content of the pyrimidine nucleotide, and to provide a method for producing the yeast extract. <P>SOLUTION: The yeast extract containing ≥20 wt.% of pyrimidine nucleotide (5'-uridylic acid, 5'-cytidylic acid and the salt thereof) and having <5 wt.% of the content of purine nucleotide (5'-guanylic acid, 5'-inosinic acid, 5'-adenylic acid and the salt thereof) is obtained by making activated carbon adsorb an yeast extract solution containing 5'-nucleotide, and liquating the extract with water. <P>COPYRIGHT: (C)2009,JPO&INPIT |
