<P>PROBLEM TO BE SOLVED: To provide slaked lime in which a BET specific surface area is increased and COD is suppressed low, and a method of manufacturing the slaked lime. <P>SOLUTION: The slaked lime is manufactured through a digesting step of reacting quicklime and water. In the digesting step, a predetermined additive is added and the additive contains a material obtained by combining at least one selected from the group consisting of polyhydric alcohols, saccharides and ethanol amines with oxycarboxylic acid.
