摘要 <P>PROBLEM TO BE SOLVED: To provide a salty-taste enhancer capable of supplementing lack of salinity when aiming at limitation of salt intake. <P>SOLUTION: The salty-taste enhancer includes an enzyme decomposer of salmon soft roe. The enzyme decomposer includes protein hydrolysis enzyme and/or nucleic acid hydrolysis enzyme. The salty-taste enhancer is further added with basic amino acid, especially arginine. Further, the salty-taste enhancer is added with potassium chloride. The salty-taste enhancer is adjusted to be slightly acidic. A method for producing the salty-taste enhancer is also provided.
