PURPOSE: A method for making seasoned liquor using polished rice powder is provided to save cost for making liquor without separate washing and pulverizing. CONSTITUTION: A method for making seasoned liquor using polished rice powder comprises: a step of washing, dipping, water-removing, steaming white rice, inoculating Aspergillus oryzae and culturing to prepare bred yeast; a step of adding alpha-amylase, protease, and water and liquefying at 50-98°C; and a step of adding bred yeast, gluco-amylase, and protease to liquefied liquid and saccharifying at 45 -65°C. |
