<P>PROBLEM TO BE SOLVED: To provide an evaluation method that reduces the amount of samples supplied for evaluation, performs evaluation easily, quickly and with a certain degree of objectivity, and enables candidates to be narrowed down to a certain degree in an initial search step. <P>SOLUTION: A base material covered with a phosphorylcholine group is brought into contact with a polyphenol compound, a bonded compound resulting from the contact is evaluated as one having strong expression tendency of bitterness and astringency.
