Prepn. of a solid, anhydrous, free-flowing prod. from dextrose conversion syrup comprises a) prepg. a molten dextrose conversion syrup concentrate of 85-93% dry wt. solids content at >230 degrees F; b) simultaneously shearing and cooling the concentrate to 200 degrees F to form a more viscous but still fluid mass; c) confining the mass, whilst keeping the solids level 93% and the temp. above that of crystallisation of dextrose hydrate; d) solidifying the mass; e) granulating the mass; f) dehydrating the particles to 2 wt. % moisture.
