PROBLEM TO BE SOLVED: To provide a chocolate confection which can be stored and distributed for a long period up to even one year, has a very well-balanced flavor, has a good texture and has a high palatability.SOLUTION: A chocolate confection includes chocolate dough and a ganache-like composition. The ganache-like composition contains, with respect to its total amount, : (a) 40-70 wt.% of sugars of di- and mono-saccharides; (b) 5-20 wt.% of oils and fats; (c) 0.1-1.5 wt.% of gallate type catechins; (d) 2.5-7.5 wt.% of water-soluble collagens having an average molecular weight of 4,000 or more; and (e) 1.0-4.0 wt.% of thickening stabilizers and/or soybean polysaccharides. The sugars of di- and mono-saccharides (a) contain linear polyhydric alcohols and other sugars. The content of linear polyhydric alcohols in the ganache-like composition is 10-35 wt.%. The moisture value of the ganache-like composition is 12-18 wt.% and the water activity of the ganache-like composition with the moisture value is less than 0.60. |
