PROBLEM TO BE SOLVED: To provide a method for producing instant coffee rich in body and flavor and excellent in a sharp aftertaste.SOLUTION: A method for producing instant coffee includes: a first step of obtaining distillate by steam distillation of roasted coffee beans; a second step of obtaining a raw material coffee extract by contacting the roasted coffee beans after steam distillation and an aqueous solvent; a third step of obtaining an adsorbent treated material by contacting the raw material coffee extract with a porous adsorbent; a forth step of obtaining a coffee solid by drying the adsorbent treated material; and a fifth step of mixing the coffee solid and the distillate. |
