PROBLEM TO BE SOLVED: To provide a fishery paste product (e.g. fishery paste product such as kamaboko) having improved self life without degradation in quality.SOLUTION: In a manufacturing process of a fishery paste product, the mixture of glycin and a carbonate or a phosphate is prepared such that a 1% aqueous solution has a pH of 8.0 to 8.9. The powder mixture is directly added to and mixed with the fishery paste product to have a glycin content of 0.5 to 5.0%, or the powder mixture is dissolved in a seasoning liquid for use and then added to and mixed with the fishery paste product, such that the fishery paste product to be produced has a pH of 8.0 to 8.9. Alternatively, glycin and a carbonate or a phosphate are prepared with a proportion such that a 1% aqueous solution has a pH of 8.0 to 8.9. Each of the powder is separately and directly added to and mixed with the fishery paste product to have a glycin content of 0.5 to 5.0%, or each of the powder is dissolved in a seasoning liquid for use and then added to and mixed with the fishery paste product, such that the fishery paste product to be produced has a pH of 8.0 to 8.9. |
