<p>The present invention provides a method of fermenting and aging kimchi using an airlock kimchi tank. The airlock kimchi tank includes: a main body (10) which has an opening on the top and in which kimchi is stored; an airlock space unit (15) which provides an independent sealed space for the opening, includes a liquid inlet (43) and a gas outlet (44) to connect the outside of the main body (10) and the sealed space, and is filled with a liquid (15a) to a certain height through the liquid inlet (43); an airlock pipe (41) which is installed in a reverse U shape inside the airlock space unit (15) and of which one end is connected to the inside of the main body (10) and the other end sinks in the liquid (15a) filled in the airlock space unit (15); and a lid which covers the opening on the main body (10). Using the provided airlock kimchi tank, kimchi is fermented and aged while discharging gas inside the main body (10) to the outside and air outside the main body (10) is blocked not to flow into the main body (10). According to the present invention, volatile gas including carbon dioxide generated during fermentation and aging of kimchi is discharged outside the kimchi tank and outside air is blocked not to flow into the kimchi tank after the kimchi is fermented so that generation and propagation of aerobic bacteria and acetic fermentation are suppressed and accordingly soft rot of the kimchi can be prevented.</p> |
