MENAQUINONE-7-CONTAINING SOYBEAN HYPOCOTYL FERMENTATION PRODUCT, AND PRODUCTION METHOD THEREOF

PROBLEM TO BE SOLVED: To provide a menaquinone-7-containing soybean hypocotyl fermentation product in which menaquinone-7 useful as vitamin K2 is generated by utilizing soybean hypocotyl.SOLUTION: A menaquinone-7-containing soybean hypocotyl fermentation product contains microbe classified into the genus Anoxybacillus and menaquinone-7. In a production method of the menaquinone-7-containing soybean hypocotyl fermentation product, soybean hypocotyl is fermented by microbe classified into the genus Anoxybacillus, to thereby generate menaquinone-7 in the soybean hypocotyl. Fungus belonging to the genus Anoxybacillus is multiplicable under a high temperature of 50°C or higher, to thereby control multiplication of general fungus.
