PURPOSE:To provide a method for producing heat-treated buckwheat flour by which the sufficient sterilization is stably obtained by using a twin-screw extruder. CONSTITUTION:This method for producing heat-treated buckwheat flour is to feed the buckwheat flour into a twin-screw extruder, prepared by inserting two screws 3 in a meshed state into a barrel 2 having an eyeglass type cross section (2a) in which two circles are overlapped and rotating the screws and capable of extruding the buckwheat flour from an inlet (2d) on the side of the barrel root to an outlet (2e) on the side of the barrel tip and thereby heat- treat the buckwheat flour. In the method, the screws respectively have a transfer zone, a compression zone and a shearing zone in order from the inlet to the outlet so as to vent gases contained in the buckwheat flour, passed through the transfer zone and compressed in the compression zone toward the inlet. |
