The present invention relates to an instant immersing and freezing solution which includes 30-40 wt% of vegetable ethyl alcohol, 0.1-0.2 wt% of a dissolvent, and 59.8-69.9 wt% of purified water and is used as a second refrigerant in an immersing and freezing process. The dissolvent comprises a chitin material, vegetable glycerin, an anti-foaming agent, yeast, and calcium carbonate and is used at -30°C to -40°C. The instant immersing and freezing solution is harmless to a human body, is formulated to be nontoxic, and thus enables food to be directly immersed even if the food is not wrapped, and increases a function of a conductor. Therefore, the instant immersing and freezing solution enables the food to maintain nutrients, contained in the food, and taste and flavor unique to the food and to be stored in a frozen state for a long period of time. Consequently, the instant immersing and freezing solution can increase merchantability of the food. |
