摘要 The present invention relates to a high pressure processing method for increasing a useful substance of rice which, more particularly, includes the following steps: (a) washing rice, soaking the rice in water, and sprouting the rice; (b) processing the sprouted rice with high pressure at 0.1-100 MPa; (c) drying the sprouted rice processed with high pressure; and (d) grinding the dried rice. According to the high pressure processing method for increasing a useful substance of rice of the present invention, a functional ingredient can be efficiently increased when rice in an early sprouting phase is processed with high pressure in combination with the high pressure processing method; an optimal pressure condition for efficiently increasing each functional ingredient is selected; and a food material with excellent functionality and high quality can be produced from the sprouted rice while time and energy costs are reduced.
