A method for cultivating a shiitake mushroom on a log according to the present invention comprises: a log processing step of forming an inoculation area on a surface of a prepared log; a log immersing step of immersing the log on which the inoculation area is formed by the log processing step in alkaline water to weakly acidify the log in a range of pH 5.1 to pH 5.5; a log sterilizing step of sterilizing the log weakly acidified through the log immersing step; a shiitake fungus inoculating step of inoculating the surface of the log which has undergone the log sterilizing step with a shiitake fungus; and a shiitake fungus cultivating step of storing the log inoculated with the shiitake fungus in a sterile room to cultivate the shiitake fungus. Accordingly, the shiitake mushroom can be cultivated, and a cultivation period can be maximally shortened. |
