PROBLEM TO BE SOLVED: To provide a new foam formation and/or foam retention improver for food and drink.SOLUTION: A foam formation and/or foam retention improver comprises a branched glucan with a degree of polymerization of 11-35 or a reduction product thereof, having a structure comprising a linear glucan composed of an α-1,4-bond, and a branched structure introduced to at least a nonreduced terminal of the linear glucan.
