PROBLEM TO BE SOLVED: To provide a meat gap processing method capable of forming gaps to meat more precisely and finely, with equal intervals and suppressing processing cost increase, and meat having gaps.SOLUTION: A processing device 1 comprising: a transport belt 14 for transporting meat X; and a press-cutting blade 10 which can reciprocate vertically on the transport belt 14, is used. The meat gap processing method repeats respective steps of: a first step for mounting the meat X on an upstream side of the transport belt 14 and dropping the press-cutting blade 10 to a position for leaving a residual part T on a lower end of the meat X; a second step for raising the press-cutting blade 10; and a third step for sending the transport belt 10 with 1 mm interval to a downstream side. |
