<P>PROBLEM TO BE SOLVED: To provide a method for producing a Clitoria terunatea L. flower extract which well maintains the hue of Clitoria terunatea L. flower, when the flowers of the Clitoria terunatea L. are picked, and prevents the disappearance and degradation of a pigment content, and to provide the Clitoria terunatea L. flower extract. <P>SOLUTION: This method for producing the Clitoria terunatea L. flower extract, comprising extracting the dried flowers of Clitoria terunatea L., is characterized in that the dried flowers of the Clitoria terunatea L. are obtained through a process for drying the flower petals at UV index of ≤7 to reduce the weight to ≤1/2 of the weight of the non-dried flower petals and a process for drying at 50 to 100°C to reduce the weight to 1/25 to 1/6 of the weight of the non-dried flower petals.
