摘要 The present invention relates to a dough composition for producing a rice waffle, which comprises: 32-38 wt% of rice powder, 18-24 wt% of sugar, 9-12 wt% of water, 16-20 wt% of egg bubble, 10-17 wt% of margarine, and 0.1-0.2 wt% of an emulsifying agent, with respect to total weight of the dough. According to the present invention, the rice waffle of the present invention: does not include a gluten composition, and thus reduces gastrointestinal disorders such as dyspepsia; and has improved food texture and flavor, and thus is provided to children and teenagers who mainly take the waffle as a nutritious snack. In addition, the rice waffle of the present invention can be provided as a simple but very nutritious substitute food for a meal to busy modern people who depend on prepared foods.
